This no-bake cookie slice recipe is vegan, gluten free, dairy free, and naturally sweet! But most people who try it wouldn't know the difference! Plus, the texture is amazing.
Base
1 C almond meal
2/3 C coconut flour
2/3 C desiccated coconut
1/4 C coconut oil
1/4 C rice malt syrup
1 Tbsp coconut water
Cookie Dough
2 C shredded coconut
2 C almonds
3/4 C coconut milk
3 Tbsp coconut oil
2 Tbsp pure maple syrup
2 Tbsp rice malt syrup
1/2 C cacao nibs
pinch of himalayan salt
Clean Chocolate Topping
2 Tbsp coconut oil
2 Tbsp nut butter
2 Tbsp rice malt syrup
1 Tbsp cacao powder
Directions
Mix together base ingredients. Use some heat if the coconut oil is too firm. Press into a lined, regular sized square cake tin.
Add all cookie dough ingredients into your Vitamix or processor except cacao nibs. Put the shredded coconut and almonds in at the top so they reach the blade last. Once blended, add cacao nibs and press over base. Freeze.
Stir together clean chocolate topping ingredients until smooth. Use heat if necessery. Pour over cookie dough layer and refrigerate. Slice, serve, and enjoy. Oh and share with me on social media of course!
Additional Notes
This is one of my longer recipes, so I'm happy to share how you can save on ingredients and minimize the amount of products you need. In this recipe I use pure maple syrup to achieve the cookie dough taste and rice malt syrup for a less sweet syrup. You could just use the pure maple syrup wherever sweetener is required. I've also used desiccated coconut and shredded coconut, so you could just use desiccated all throughout. The coconut milk could be replaced for almond milk or water. And the nut butter in the clean chocolate topping isn't 100% necessary, it just gives it that little bit more.
My regular favorite health food brands that can always be found in my kitchen are Pure Harvest for my nut milks, coconut milk, and rice malt syrup. Mayver's Pure Foods is another good one for affordable nut butter that is easily accessible in supermarkets and health food stores. Loving Earth and Organic Burst are also great ones to look out for. You can use whatever blender or processor you have but with my experience, it's easiest when the machine is powerful as there will be no lumps and the mixture forms better. That's why I use Vitamix and sell them for a discounted price in my shop for everyone to enjoy!
